Tips for Picking Fresh Fish
Choose a fish with clear eyes.
A fish with cloudy eyes is not a fresh fish.
Check the gills.
The gills should be a rich reddish purple, not milky or sticky.
Check the firmness of the flesh.
When you press into the flesh, it should bounce back and feel very firm.
Check the guts.
The guts are the first thing to spoil on a fish, so if you find a fish with guts still intact,it means that it hasn’t been at the fish market longer than a day or two.
Smell the fish.
The fish should smell like the ocean, fresh and not like ammonia.
