At first glance a knife consists of two parts, the blade and the handle. But when you look closer, the knife has many other features, which are worth looking at in more detail.
If you are looking for a high-quality knife, you should take all of the following into account:
The blade surface - the blade is forged from a single piece. The high-quality chromium-molybdenum-vanadium steel is hardened to 58° Rockwell. This ensures that WÜSTHOF knives are sharp, long-lasting and easy to sharpen.
The etching - this is proof of the knife's origin and, as well as the company logo and place of origin, it also includes the product number and name of the range.
The blade spine - on a high-quality knife, the spine is carefully ground and beautifully smooth ("deburred").
The cutting edge - enables a clean and precise cut. The outstanding sharpness and edge retention of a WÜSTHOF knife is thanks to the special PEtec sharpening process.
The bolster - the thicker integral section between the blade and the handle shows that the knife is forged. The weight of the bolster ensures an optimum and safe fit in the hand (balance).
The finger guard - protects the fingers from sliding down the blade (safety).
The tang - the handle is attached to this extension of the blade. The handle can be made from various materials: Plastic, wood or stainless steel.
The rivets in WÜSTHOF knives - the stainless steel rivets permanently secure the handles to the tang.
The heel of the handle - this is shaped so that the knife can always be handled safely.
