After sharpening and honing, use the WÜSTHOF 12" Butcher Steel to polish the edge of your knife. This butcher steel is a fine honing steel which further sharpens and adds a perceptible increase in sharpness.  

• Wipe gently with a damp cloth and immediately towel-dry.
