Whole-Roasted Sweet Potatoes
with Salted Browned Butter
4 medium sweet potatoes
3 tbsp of salted butter
Pinch of salt
Preheat your oven to 400°F with a rack in the center. Prick 4 medium sweet potatoes all over with the tines of a fork; set them right on the center rack with a baking sheet. Roast until very tender, 45 to 55 minutes.
Meanwhile melt 3 tbsp of salted butter in a small saucepan over medium heat, stirring occasionally until the butter foams, sizzles, and turns a golden, copper-penny brown with a nutty, caramelized fragrance – about 5 minutes.
Split the tops of the roasted sweet potatoes and drizzle them evenly with the salted browned butter.
